Seasoned To Perfection
Hello all my fellow grill masters, I would like to share with you my grill tips for the ultimate tri-tip. My first recommendation is to start with untrimmed tri-tip, then cutting it into four chunks and trim each chunk, leaving a quarter inch of fat. Now it's time to start seasoning the meat using Charlie Lovato's Tri-Tip seasoning. Season the chunks nice and heavy on every square inch, now you're ready to cook! Cook on direct heat, fat side down first until the flames rise and the grease from the fat coats the grill. Rotate the chunks with a carving fork, barely piercing the edge of the meat, about every seven minutes. The carving fork works best as it allows the seasoning to stay intact, whereas tongs will cause the seasoning to rub off. Tri-tip should be medium after 25 to 30 minutes of cooking. Now slice up the tri-tip and start serving those taste tester's for your friends and family at your Midnight Barbeque!
